White Chicken Chili #SundaySupper

Every year during our neighborhood tailgate party, we have a chili cook off. Prior to the event, you have to email the host and let them know you are entering the contest. On the day of the event, you show up with your crockpot and hand it in with your chili’s name. Two of the neighbors keep track of the entries.

A sample of each crockpot is dished up for the team of 4 judges. The judges do a blind taste testing and award the Chili Cook Off Winner.

All day long during the tailgate party, neighbors can dig in to the crockpots of chili and decide which is their favorite. It’s a great way to pick up some new crockpot chili recipes!

Our family loves chili and it’s one of my go-to meals especially on a game day. But, no one wants to eat the same old chili recipe all the time. So, I try to switch it up between beef, vegetarian and this White Chicken Chili.

White Chicken Chili

  • 1 Tbsp unsalted butter
  • 1 Tbsp olive oil
  • 1 large onion, diced
  • 1 15 oz can of cannellini beans
  • 1 15 oz can pinto beans
  • 1½ cups of chicken stock
  • 1 can green chiles
  • 2 Tbsp my taco seasoning
  • 2 chicken breasts, cooked and shredded OR meat from a rotisserie chicken
  • Salt and black pepper, to taste
  • sour cream
  • Sliced pickled jalapenos
  • shreddedd sharp cheddar cheese
  • salsa
  • Cholula
  • Tortilla Chips

Saute butter, olive oil, and onion until the onions are softened, approximately 5-6 minutes.

Place chicken, beans and sautéed peppers and onions in crockpot. In a medium bowl, combine taco seasoning, chiles, and chicken broth. Pour over top of ingredients in the crock pot. Cover and cook on low for 8 hours.

Use an immersion blender to give the chili a little thickness. Blend to desired chili-like thickness.

Serve topped with sour cream, cheddar cheese, jalapenos and salsa....and, of course, some crushed tortilla chips!
